Sodium Carboxy Methyl Cellulose (CMC)in Food Industry

· Applications

Sodium Carboxy Methyl Cellulose (CMC), also known as cellulose gum or Tylose, is a highly effective additive for improving product and processing characteristics in various fields of application. CMC is a White or yellowish free flowing powder, odorless, tasteless, hygroscopicity, easy to disperse in the water form a transparent colloidal solutions. Sodium carboxy methyl cellulose is a thickening agent. because of its good features so that it has been widely used in food industry. To some extent, it has promote the rapid and healthy development of the food industry.

It functions as a thickener, water retainer, emulsifier, stabilizer, protective colloid, suspending agent, gelling agent, and flow control agent. It is also used as film-forming and binding agent. CMC is widely used in the food, personal care products, industrial paints, ceramics, oil drilling, building materials and etc.CMC (Sodium Carboxymethyl Cellulose) is widely used in the food industry, mainly playing the role of thickening, stabilizing, water retention and enhancing taste. It is used to make yogurt, drinks, jellies, syrups, biscuits, instant noodles, wine and so on.

Properties of Celopro CMC:

  • Easy dissolve in cold and hot water, stable viscosity.
  • Possess good emulsion and solid dispersing capabilities.
  • Form firm and transparent coating.
  • Not easy to deteriorate.
  • Not dissolved in fat and organic solvents.
  • No adverse health effects to human body.
  • Stable quality in high purity products.
  • Different D.S. and viscosity products.

Bread

Sodium carboxymethyl cellulose (CMC) Sodium carboxymethyl cellulose (CMC) used in bread production can make bread uniform, increase the volume of bread, and reduce the phenomenon of dross. It prevents the bread from collapsing, and has the effect of keeping warm and fresh.

Beverages

In beverages containing fruit or fruit, solid contents tend to settle to the bottom of the container. The addition of sodium carboxymethyl cellulose (CMC) to this drink can prevent this phenomenon and make the pulp or fruit evenly suspended, brightly colored, eye-catching in the container, and prolong the shelf life of the fruit drink.

Condiments

The specially modified CMC has good salt resistance, acid resistance, thickening and stability. When applied to soy sauce, soy sauce powder, peanut butter, hot sauce, jam, oyster sauce, sesame sauce and other condiments, it can improve the quality and organization of these products, making the state of the product thicker and more stable; it can improve the sensory quality of the product, such as Color and aroma.

Soybean Milk

CMC can stably suspend and emulsify soybean milk. It can prevent fat from floating and sinking, and has a great effect on whitening, sweetening and removing soy taste of soybean milk. The dosage is added in the proportion of 5‰ of the total amount.

Ice Cream

CMC can be used in ice cream with good formability and not easy to break. It gives the ice cream a nice gloss and beauty
